This time of year brings an abundance of zucchini for gardeners. I love zucchini, but I can’t eat that much of it. One thing I don’t get sick of is homemade zucchini bread. I’ve tried a few different recipes over the years, and there is one that I just can’t get enough of. It’s so moist and cinnamon-y and has the perfect, slightly crusty outside.
Perfect for breakfast, lunch, or a mid-day snack, here is my zucchini bread recipe that will quickly become your new favorite!
Start by combining the sugar, oil, and eggs and mix well.
Next, add the flour baking soda, baking powder, salt, cinnamon, and vanilla, and mix well.
Finally, grate the zucchini and add it to the mixture. Mix well. Pour into 2 bread pans.
Bake for about 1 hour at 325 degrees.
BONUS: FREEZE IT! Wrap it tightly in plastic wrap and put it in a Ziploc bag for up to 6 months. Enjoy zucchini bread all winter.
